Roast Turkey with Cranberry Sauce Ingredients
1 whole turkey
100g butter 100g onion, chopped
100g celery, chopped
10g crushed sage and tomato to taste Salt and pepper
10g minced garlic
Balsamic vinegar 20g
Sugar 15 grams
How to make Roast Turkey with Cranberry Sauce
1. In a skillet, melt the butter over medium heat. Stir in onion, celery, sage, thyme and pepper. Cook, stirring occasionally, for 10 minutes or until browned.
Wash the turkey inside and out under running water.
3. Whisk together the butter, sage, salt and pepper. Rub the inside and outside of the turkey. Loosely pack the stuffing into the neck and body cavities, fold over and secure the neck flap closed over the stuffing. Tuck the legs together.
4. Place the turkey, breast side down, on a rack in a roasting pan.
5. Cover with foil and roast in a 325°F oven for about 1.5 hours, basting with pan juices every 30 minutes.
6. Remove the paper and continue. Roast or 1 3/4 hours, basting every half hour, or until an instant meat thermometer inserted into the thickest part of the thigh reads 185°F. Place it under the lamp for carving.
7. Meanwhile, in a saucepan, bring the chicken stock turkey neck, giblets, onion and bay leaves to a boil, reduce heat and simmer,
8. While the cooked turkey rests, shake off the excess fat from the roasting pan. Flour until well combined.
9. Bring to a boil, season with salt and pepper to taste. Strain and serve with turkey.
10. Stir in onion and garlic and cook, stirring occasionally, 5 minutes or until softened. Simmer for 5 minutes or until reduced.
11. Now add the cranberries, sugar, salt and pepper.
12 Mix in the onion mixture. Bring to a boil and cook, until the cranberries are soft and the sauce has thickened.
